How long does honey stay good and how to store it to last. Just harvested more than i can eat for a long time.
Honey is one of the only foods that will not spoil due to the high concentration of sugar in it. Keep it room temperature and you'll be fine. It may crystallize, but that's no worry either. Put it in a pot of hot water until it liquefies again and you're set...or make creamed honey.
theres also less of a chance it will crystallize if you keep it in bulk rather than in separate jars or other small containers....or so i've heard.
I have read (never done) that freezes and keeps also. Don't freeze in glass of course.
Why not freeze it in glass? As long as there is room for expansion on top of the container, what would be the problem??
Also if you do place it in hot water to turn back to liquid, make sure the hot water is not boiling.

Under 18% moisture. Room temperature would be nice. Frozen is better. Cool will crystallize quickly but that won't hurt anything.
