I am wondering what I should be looking for once I get my hives to see if the bees have any diseases or mites

Experience.......

:D You need to go into them weekly or semi weekly and just look things over. Soon a pattern will develop and you will take note of changes or things you read about.

what you should look for is a seasoned beekeeper to steer you in the right direction.

Also you should look for the queen age, if is old, hairless on torax and have torn wings must be replaced.
