What's a fair price for 7 healthy, established hives, 1 weak hive, a home made centrifuge, lots of hive bodies, supers and frames, several bee suits, 2 smokers and other miscellaneous equipment?
A friend of mine, who knows I plan on getting some bees, is offering to sell me all of his bee stuff.
I don't want either of us taken advantage of.

A lot depends on the age/condition of the equipment. Considering that nucs have been selling this spring for around $120, a complete hive in decent condition, with healthy bees would be easily be worth around $200-$250. As for every thing else - get a bee catalog, see what the cost of items are new, and consider half that price as a starting point for discussion.

I like that...very true words
I would say that at this time of year, a healthy hive with sound wooden ware would re-sell for $250. If you are buying 7, that should come down to $200 each for a total of $1400. The rest should be thrown in to the deal for free.
If this were October, I would cut that in half.
