Title: Heating vs Freezing

For the purists among us, we are told not to heat honey say above 100 degrees because it kills the wild yeasts and other beneficial things in honey.  But what about freezing.  We are told to freeze frames all the time to kill wax moth and shb eggs before processing.  Doesn't freezing kill the good stuff just like heating it does?

Enzymes break down in heat.  They don't in cold.

Some of the old Swedish Puritan beekeepers say if make the taste change, haven't notice myself.

I like eating runny honey harvested at the summer equinox at Christmas or new year when its - 20oc and the wind and snow is howling around outside the house.

I allways save some in the freezer, after 12 moths it will crystallize faster.
