Title: extracting honey questions?

Hi,

I had a couple of questions on extracting honey.  This is the first year my bees did good overwintering (lost 1 out of 7).  Been averaging 50 % loss. Bee clusters are larger now than they were last fall.  I will probably have  to do couple of splits soon, or box to give more space? 

If I get enough frames to extract, how can I make sure I'm not extracting the sugar water I feed bees in early fall to get food stores on the bees?  Do you add a new box and only extract from the new box frames?

That's pretty much what I do.  All the honey that they have capped in the spring is theirs or gets used in splits or nucs.  These hives are ones that I am not going to harvest any honey from.
