I have caught thousands of blue gills and perch in my life. Not one was big enough to eat. They tell me they are delicious.
There was a pond close to me when I was a kid, the biggest blue gill I have ever seen before or since. Could barely get a hand hold around them to remove the hook because of their size. Scale, gut, remove the head, leave the fins and tail, fry whole. Once fried easily pull the fins, including the top fin. Meat would easily peel from the bone and absolutely 'outstanding' taste. Two fish per person, fires and hushpuppies make a satisfying meal...
