Ours is literally as dark as molasses. Our main pollen/nectar sources (that I know of) are Pepperwood trees; our apple, pear, plum, cherry, kiwi orchard; borage; California poppies, phacelia, we have many oak and fir trees; and blackberries.
I wish I could answer but I do not have Pepperwood in my area as far as I know, but I bet Coolbees can help you?

I do not know about Pepperwood, however I have received Buckwheat honey from another beekeeper that is dark as molasses.
