Hunters, which big game animal has the best flavor in your opinion? Example Moose, Bear, Deer, Bighorn or other sheep, Elk, Buffalo, etc.
Second question which, in your opinion, taste closest to beef?
Not a hunter but I have heard many times that elk wins that prize.
I liked them all. Hard to beat Elk. But it's probably the closest to beef next to Bison. I guess I'll pick Bison. I've enjoyed all of them that I've had and I've had most everythng in North America but big horned and dall sheep.
I?ve had deer and bison. I would definitely say bison. The hamburger meat has a Smokey flavor which is very good.
This was a bison that we had here on the farm. We were feeding it apples pears squash and all kinds of fruit that we were getting from a produce supplier so this may have changed the taste of the meat.

It has a deeper flavor than beef. There is almost no fat on a buffalo. Just a little bit in the gut. Almost none on the steaks. I had more fat on a young doe, that my neighbor constantly corn fed, than was on that buffalo.

My only bison was a steak in a Wyoming truck stop. I would have been glad to trade it for a shoe sole. The sole would be tenderer. My favorite mammal is white tail deer, racoon being second. Rabbit third. Mule deer and antelope are not on top of my list. My second favorite meat is Alligator. Frog legs are the world's top fare, by many points.
Bison is like all meat in that a poor cut poorly butchered, not aged and poorly cooked will be like shoe leather or worse.
Bear. Hard to beat a braised whitetail shank though, or a rib roast.

The best thing about bear is to render the fat and use it for medicine. It's magic. Even better than lanolin for dry skin etc.
