We've just extracted our two deeps and have about 9 gallons in two pails. Will the honey remain "fresher" longer if it remains in the bulk storage or if it is transfered right into our one pound containers?

Or does it even matter?

I think that it wouldn't much matter. I usually just pour the honey directly into their individual containers after extraction because, I have ALOT of free time and, I think that the honey may stay better a little longer given, I lost the cover for my bucket.

Honey remains "fresh" in warm place if temperature is over 25C.

It depends from what kind of plants you have got honey and how it clystallizes. If you put it direct into jars, honey may be like concrete or sand like crystals.
