Gourmet magazine last year (I think it was the Oct or Nov 2006 magazine) featured an article on Tasmanian honey and Tasmanian beekeepers - you can order the honey from Dean and Deluca!  Oops not there anymore but here's a US source:  http://www.earthy.com/Tasmanian_Leatherwood_Honey_-__P848.cfm

My sister and neice both live in Tazzy, and my dad brought some leatherwood honey home.  Very striking honey, tasted like a very perfumey flower.  Would probably create a beautiful mead.
