Collecting pollen

I am getting a package of bees on wednesday and would like to start collecting pollen from them this year. When would be the soonest that i can steal some pollen from them, they are a 3lb package of italians? I realize it might be a few months.

I would let them build up in the first box at least before taking any, Maybe in the fall with goldenrod.
