Apis Cerana Honey Moisture Content

Hi guys,

      I found out from a japanese guy that the Apis Cerana Honey has more water content that Mellifera honey? Is anyone an expert here about this? I need some tips on shelfing cerana honey. Bubbles are hard to remove and I don't want to process this honey I want to keep it raw! Thanks guys!

Wolf, I don't have a book answer but two things; I don't process my honey either - I think it takes from the taste. Another thing, if they cap it - it should be okay. Once you sling the honey out you have to let it set a day or so in a warm environment to let the bubbles come to the top. I fill my jars using the gate valve at the bottom. Once it starts getting low I tilt the bucket and finally I just jar up the bubbles - they go good on biscuits, or toast, or oatmeal, or..,
