New bees in old deep question

Hello everyone
I will be picking up a 3 pound package in a couple of weeks and have 2 empty deeps that the bees were in (bees did not make it though winter) The deeps are in excellent condition, with several frames with capped honey, some with partial capped honey and some with no honey. My question is

Would you suggest I put the new bees in 1 deep or 2 deeps????
Would it be best to put the partial frames in the middle with the full ones on the outsides???

1 box to start and watch them until they need another. Honey frames to the outsides, empty drawn comb in the center.
