honey beer/ wine/ mead

The Bee Man

Hello from a remote corner of the world, along the Nigeria. Cameron border.

Now it is about 1PM Eastern time, USA.  I need this information by midnight, Thursday into Friday, if possible.  Internet here is very hard to get, as rain and cloud cover ruins the connection.

I have heard that honey beer is popular in Ethiopia.  I am looking for SIMPLE recipes to make it here, using as few ingrediants as possible.

Any kind of alcoholic beverage from honey, please, post a simple recipe/ formula.

Many thanks.  If anyone is interested, when I get home I can post some pictures from this trip.  I am teaching beekeeping to a group of four tribes in the Niger Delta- a great place to visit but... you know the rest.

Does anyone make their own mead? Does anyone have any suggestions on making mead? I am thinking about trying it and I was wondering if I should buy a kit ?  The kit I am looking at includes the following..

Instructions and Recipes
6 gal poly fermenter /  faucet
Hydrometer
3 oz. yeast energizer
6 oz. acid blend
2 oz. grape tannin
100 Campden Tablets
3 pkgs. Yeast
25 Corks
25 Foil Bottle Seals
25 Bottle labels

According to the company selling the kit the only other thing I will need is bottles?

Found this, I have not tried it:

Honey Beer

Ingredients:

1 lemon
1.5lb dark honey
half an ounce of hops
1 teaspoon granulated yeast (a beer one would do - or bread yeast)
1 gallon water

Method:

Peel the lemon rind, avoiding the white pith. Squeeze the juice and strain to remove pips.

Dissolve the honey in 2 pints of the water in a bucket.

Put the rest of the water into a large pan with the hops and lemon rind.

Bring to the boil and boil gently for 30 minutes.

Strain the hop water into the honey solution and leave to cool.

Discard the hops and lemon rind.

Add the activated yeast and lemon juice into the cooled mixture, cover over and leave for 3-4 days in a warm place to ferment.

When fermentation has ceased, siphon into sterilized 1 pint beer bottles, leaving an airspace at the top. Add half a level teaspoon sugar to each bottle. Seal with plastic pop-off caps and leave in a warm room to ferment in the bottles for a few days.

Then store for at least 2 weeks in a cool, dark place before drinking.
