crystallized honey

will it take honey longer to crystallize in large containers ( 5 gal )  than small jars ?

I think it does. Of course, once a bucket starts, you still need to liquefy the whole thing anyways.

In buckets, I notice a "layering" of the different sugars. (Fructose, sucrose, etc.) It seems that the crystals will form layers starting at the bottom of the bucket while the top remains liquid for a longer time. So I guess if you scoop off the top, you are getting a selected portion of the sugars that make up honey.

I try to bottle in nothing but glass. Much easier dealing with cystalized honey, in comparison to plastic bears.

thanks for your input . the last honey i bottled started to crystallize after about 2months .

Just finished off my orange blossom honey and it was crystallized in parts.  I actually enjoyed the crystals.  Loves the crunch.
