Vinegar Smelling honey!

Short story to bring you up to date -
I got a call to capture a swarm (actually a hive in a phone cable pit), opened it up to see if it could get them out, and no, not without a bee vac
Currently still building my bee vac (it has *no* suction! Stupid thing...)
I did however, clean up some of the comb that was stuck to the lid i lifted
It was nearly black and very full of honey
I put that into a clean container and took it home
Now it smells very clearly of vinegar!!

I assume that means its not finished processing and isnt proper honey yet?
As i have half a bucket worth of it - can i use it for anything?? Obviously not to feed my bee's (contamination risk??)
The comb is very very dark, is it good for getting the wax out? Or dont bother, just dump it all? (I hate waste...)
