supering method ?

Finishing my first year. This was a growth year from 1 to 4 hives. The fall flow is just beginning here. I have 4 hives and will keep each in 1 deep with a super on for winter here in east central Fla. My question is should I just keep 3 supers available for each and store full frames (inside) until I am ready to extract or get more supers and leave them on the hives ? Is there a benefit to leaving capped frames on the hives, like additional space for the bees to cling to after dark or bad weather ? If I rotate frames then I will eventually need a place to put them that will not damage the comb too much anyway.
How many supers per hive do you normally keep ? 4,5 ? In Fla we do not get freezing weather to store frame filled supers outside.

Where I'm at it is usually 1 deep and 1 super for winter. If you want to add supers to gather surplus honey then put the full super on top of the empties. When flow is over go back to the 1.5 story configuration. To much space will make it harder to maintain hive temp. Honey is also hard to heat up in the hive and wastes resources.
