Early Harvest Honey

We took three frames of capped honey yesterday, crushed them and strained the honey.  My son bottled it today.  We got six pints of very bright honey.  It seems thinner than many honeys and has an almost citris flavor (which is odd given that we have no citris trees in the Ozarks).  I am looking forward to the next few frames we take to see how it differs.  Fat Bee Man gave me the advice to take a few frames throughout the season as they get capped and enjoy the differences.  I am glad I took that advice as it adds another dimension to the hobby.

now the thing is to get more hive and learn your flows in your area, this way you can sale you hney on what flow was going on then,  I have tulip poplar yards and clover yards,  then after everything else has bloomed here in GA we have sour wood flow in June, the trick is learning the times and whats blooming the go from there.....
