If I want to make 1 gallon of 2:1 syrup how much sugar do I mix with how much water? When I mix 85 ozs of sugar with 43 oz of water I do not end up with a gallon of solution.  What must I do?

Try 64 ounces of water with 128 ounces of sugar. It will be very close.

Converted, that is 1/2 gallon water and 1 gallon of sugar. When dissolved, sugar will yield approx. 50%, or 1/2 gallon.

@ iddee & scdw43,           iddee your formula states 8lbs of sugar and scdw43 your formula indicates 8.8lbs of sugar.  Does the matter of almost a whole pound of sugar make a difference?

I didn't exactly measure, but I filled a one gallon jar with sugar, then began to slowely add 2 quarts of water, while heating in boiling water. I ended up with exactly one gallon of syrup. This recipe was from the website of one of the guys on here. It doesn't sound like it would work but it does. :)

@ iddee.  I used your recipe.  When completed I had 1 gallon & 2 cups.  However I measured the water by volume then the sugar by weight (oops).  My next batch I will weigh the water instead.

Thanks to all who helped

Do it like JClark and it will always be right.
