I grow A variety of that in one of my flowere gardens!  It looks like a mint til it blooms but the flower is not right.  I feel so frustrated that I cannot remember the name!

It sure resembles spearmint right before the bloom doesnt it? Except for the inflorescence is way too long.

I don't know the leaves are a little different.  Does your plant have a square stem?  The borage pictured does not look like it does.  So very many varietals too.  Glad my life doesn't depend on eating it.
