Freezing honey

Haw much does honey expand when frozen? Can it be freezed in glass container?

I freeze honey in glass jars all the time.  It does fine and is so thick that there is very little expansion.  I have never had an indication of a space problem in a jar that I have frozen.

Glad to know this bit of info as I thought I had to leave some room at the top of the jar for expansion. Nice to know how easy it can be done.

doesn't hurt to leave the lid loose until it's frozen, or cover it with some plastic wrap until frozen.

why would someone freeze honey? Honey ice cubes?

I know it's supposed to keep it from crystalizing.  And if you're doing cut comb or chunk honey it will kill any wax moth eggs so that they can't hatch then die and leave someone a nasty surprise in their honey.

Have you noticed that honey tastes the best when flows from the extractor? I wonder if you could preserve this taste better by instant freezing.

Wax moths are generally not a problem in comb honey, they typically infest the brood comb.

The only honey I freeze is chunk honey to assure that I will not give honey to someone who might open the jar and find a wax moth worm in the honey.  The rest of my honey I don't freeze.
