When is the best time to harvest honey from the hive? Right now I'm planning on the end of the month. But ideally is it better to wait for the end of a flow or during a flow? How long after a flow? Is it risky to wait until fall?

If you just want wild flower honey, harvesting at the end of summer is fine.  If you want specific types of honey, harvesting after each bloom type is recommended.  Up to you depending on what you want.
