Question about extracting a honey

In Russia the most of beekeepers extract honey in 5-7 days after bees seal honeycombs. I'd like to know when the american beekeepers  extract a honey?
How do you think, how many days a honey should be in sealed honeycombs before it will be ready?

Honey can be harvested as soon as it is capped, the bees know when it's at the right percent (18%) moisture.
