Temperatures affect on Honey Flavor

It is my experience that honey at 90-100 F tastes more flavorful than once it cools down to room temp of 72 F. 

Can anyone else confirm this?  If so would you recommend people putting honey jars in their sun facing window sill to get better flavor?

This is something I never noticed. What I do notice is the honey flavor will change over time, even as little as a few days time.

 I think it makes a difference if the container is capped or open.

If a lid is retained, I think it does affect it positively.  If it is left open, less flavor.

I have had situations where pails of honey, waiting to be bottled have been open in a warm room, next to some that stayed closed.

sampling the open vs closed pails.  The closed pails, exposed to same temp, tasted better.

Very best honey I ever tasted was warm out of the hive!!!   Never had it taste like that out of a jar.  Maybe it is the temp,  kinda like when you pour it over warm biscuts!

Well, I am aware honey has some oils in it that give flavor. These are the oils that cook off when it is heated.   I think their temp and oxidation levels alter taste.

Any food tasted differently (slightly) when eaten at different temps and ambient temperature seems to bring out the most perceived flavor. Shrimp cocktail (chilled) tastes much different than steamed shrimp (warm or hot) to me.
