Shane, I ran across this video of some of your mates catching what you guys call Jewfish. Massive Jewfish On Soft Plastics

Our redfish are extremely strong fighting fish and would likely require heavier tackle to catch them. Although I have caught them on fly rod. My biggest was somewhere between 25-30lbs. Hey mate,

Those guys in that video are using 30lb braid main line which we consider pretty heavy gear.  Should be able to knock off just about any fish within a few minutes on that.
Because of the amount of boat traffic and people fishing around here these days, we have had to adapt our fishing skills to suit the shy fish. These days my "heavy" gear is 14lb braid main line and up to 30lb mono leader which knocks over 30lb fish no worries at all. Infact my last fishing trip I boated a 26kg(57lb) LT Tuna on 20lb mono main line. Took about 10 minutes to get boated from memory.

Unfortunately its common here. If you fish too heavy the fish shy away. 6-8lb is normally used for most fishing around here. I just happened to be using the 14lb as there was a massive king fish taking my baits.
