Tough question probably, but generally, when the flow is on, how fast can a hive fill up a super?

That depends on the sugar saturation of the nectar, the distance of the haul and weather.  When you have bees sitting in a field of alfalfa or sweet clover with good soil moisture, cool nights and hot days, I have seen a deep super jammed in less than a week.  Unfortunately, those perfect weeks are not that common.

It depends on the size of the colony.

Last summer I had a hive on balance. It had 5 langstroths and 3 mediums.

The best week was 7,5 kg a day. It brought 50 kg in 7 days.

So 3 mediums in a week.
