Is it OK to stack Nuc's on top of deeps after the cold has set in?

Yes, but if keeping as two separate colonies, I would put the entrance to the rear or at the top.

not an issue.  I put nucs on top of full sized langstroth quit regularly.  It is much easier to work on a nuc when it sits on a two high deep.

Am I missing something here?  You're in SOUTH FLORIDA!!!!  You don't get cold.

I wouldn't hesitate to do that up here in the winter since the bees "sleep" as Finski used to say, but down there the bees are going to be more active and you might promote robbing. :idunno:  You might ask a beek in Collier County.

Does it freeze where you are?  I'd be afraid of them not having been confined long enough to reorient and wandering off to some other hive more than them getting cold... nucs aren't an issue here until it gets sub zero...
