Possible fermenting honey

 We have a pail of honey from last fall that has a different flavor, slight ferment taste??.. It was harvested late due to lots of reasons and was not all capped. Is there a use for this honey. The flavor is not bad but I do not want to sell it. Thanks

I just bottled 5 gallons of the stuff myself. It's called Joes ancient orange :-)........ But I started the fermentation purposely.

All I can say is, if anyone is wondering what to do with a few extra pounds of honey, you have to try this recipe. It's easy, it's quick, it's cheap, and it is very good. There is a one gallon recipe widely available online.

damar, what state are you from? I was wondering if you might have some goldenrod honey who's taste could be throwing you off.

A little fermented just has a bit of a bite to it.  Really fermented can be kind of nasty tasting sometimes...
