I have some hives that are a deep and a med. and some that are a deep and two med. to add another deep could i just put it on top of the mediums, or do i need to do something else?

Newbee person.

I am in the same exact situation with one  hive.  I am in the middle of Mississippi and the cotton around me is in the final stages of bloom.  Goldenrod is in another month.   I do not have drawn comb and the brood box would be just foundation.

The second hive is weak and I requeen.  The queen was released last Wednesday, but I did not see her this past Saturday (she is mark).    I thought I saw some queen cells, but I am not sure.  I am going to let look at the hive this Wednesday and hope everything is OK.

If you are putting on another deep, place it under the mediums that way you will have 2 deeps as a brood box and the mediums can be harvested later.  You may find that there is brood in the mediums when you go to harvest it.  I use all mediums so that I can move such frames into the brood chamber and remove a frame of honey from the brood chamber.
Uniformity makes for simplicity of operation.

If it maters there is brood in the mediums and that is why i question what to do.  I already have gotten the honey off , treated and just trying to build up for next year.

In that case just leave the medium in place and let them winter over.  Place the other super on top--you can always switch the boxes after the brood is hatched or leave it as extra stores.
