What to do with old honey??

Boy I am really taking advantage of this forum today, but have so many questions and want to do things right.
The honey that overwintered in the hive. Ten frames filled about 3/4 each. Darkish colored. Do I just leave it for the bees or am I supposed to extract the honey as soon as possible.

In reading some books, I have read that the overwintered honey would have crystalized already and would not be good for the bees or for me. What should I do??
